




I’ve heard that red is the color of passion. If this is true, Ruby and I are passionate about baking our chewy, red apple oatmeal cookies! Not only is this recipe super easy to make, but it tastes delicious…. deliciously fall!
Before we began baking, I dressed my little girl in a red dress and slipped on her ruby red slippers. She clapped her hands in delight once they were on. A few weeks ago, we watched one of my favorite movies from childhood – The Wizard of Oz! When I was in college, if I came home on a weekend, which was rare, I would make puppy chow for my younger siblings and turn on this movie. It was a comfort of home when I missed being there. Today, as I watched the film, I couldn’t help but be reminded of those days. And when Glinda, the good witch of the north placed the ruby red slippers on Dorothy, I knew my little girl would be this character for Halloween.



Next, we talked about the color Red. “Your dress is red, Ruby. And your shoes are red. What else is red?” We then went on to practice writing and spelling the letters on paper. Lastly, we baked our cookies! This was by far my daughter’s favorite part. Below is our recipe!
Chewy Red Apple Oatmeal Cookies:
Ingredients:
- ▢1/2 cup butter, coconut oil works great too
- ▢1/2 cup light brown sugar
- ▢1/4 cup white sugar
- ▢1 egg, I used 2 small brown eggs
- ▢1 tsp vanilla extract
- ▢1 cup all-purpose flour, gluten free flour works well too
- ▢1/8 tsp salt
- ▢1/2 tsp baking powder
- ▢1 tsp ground cinnamon
- ▢1 3/4 cup rolled oats
- ▢1 large Jonathan apple, peeled, cored and chopped into small pieces

Begin by preheating your oven to 350 degrees. Line 1-2 large baking sheets with parchment paper. Combine all of the dry ingredients in a large mixing bowl. Next, add your wet ingredients to the batter. Using a spoon, scoop out dough and place it on the baking sheet, leaving an inch in between. Bake cookies for 13-15 minuets. The bottom of the cookie should be golden brown. Let cool for 10 minutes before taking a bite. Enjoy!
