


When the weather is gray and cloudy, like it is today, you need all the feel good, positive energy boosting vibes you can get! What I like to do is literally brighten up my whole space. I do this by turning on all my lights, putting on my favorite music, and lighting candles. The warmth from the flames and the scent of the candles always puts me in a good mood.


Next, my daughter and I put on our favorite cozy, comfy sweaters with fuzzy socks to complete our look. We were officially ready for our first activity – Cozy Sweater Card Making! I mean, you can’t get cozier when your craft is a sweater! We got this idea from the Highlights magazine December issue. I love this easy craft so much because you can design your sweater any way you would like. Ruby turned her sweater into a Christmas tree. I turned my sweater into a Thanksgiving turkey! And later, when my son returned from school, he turned his into a birthday card that said, “stay cozy.”



Cozy Sweater Cards
What you will need:
- Construction papter
- Glue stick
- Scissor
- Googly eyes
- Pompoms
- Stickers
- Writing materials – pen, crayons, markers
Instructions:
- Begin by folding your constructions paper in half. Draw your sweater, with the neckline on the fold. Cut out the shape. Decorate the front of your sweater. Write a message in the inside.
After our card making fun, I decided to cook up a delicious, feel-good dish – Roasted Cauliflower Steak with a Maple Dijon Tahini Dressing! Because on gray, cold days you not only want to eat something really good, but you want to eat something that makes you feel good! This dish is perfect for that! It also would be a great vegan and gluten-free addition to your holiday menu!



Cauliflower Steak
Ingredients:
- 1 head of fresh cauliflower, cut evenly into steak slices
- 2 tbsp olive oil, coat steaks completely on both sides
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
Directions:
Preheat oven to 380 degrees. Line baking sheet with parchment paper. Drizzle cauliflower steak with olive oil and season with spices on both sides. Roast cauliflower in the oven for 25-30 minutes. Flip halfway through until they are golden and crispy.

Maple Dijon Tahini Dressing
Ingredients:
- 1/2 cup tahini
- 1/4 cup maple syrup
- 2 tbsp Dijon mustard
- 2 tbsp lemon juice
- 1/4 cup olive oil
- 2 tbsp minced garlic
- 2 tbsp water, if too thick add more
- 1/2 tsp salt and pepper
Instructions:
- In a small mixing bowl, mix in your ingredients until smooth. Add additional water if your dressing is too thick. Drizzle dressing over steak and serve warm. Enjoy!
